Grown in Calarcá, in the heart of Colombia's Quindío department — one of the most celebrated coffee-growing areas in the country, sitting at 1,560 metres above sea level in the famous Eje Cafetero, Colombia's coffee axis. The region is known for its rich volcanic soil, ideal humidity, and generations of coffee farming tradition.
This coffee is grown from Pink Bourbon, one of the most prized and visually stunning varieties in specialty coffee — rare, naturally sweet, and exceptionally well-suited to experimental processing. Rather than a flavouring or additive, this is a true co-fermented coffee — the cherries are fermented together with fresh banana for 48 hours, allowing the fruit's natural sugars and aromatics to integrate directly into the bean during the fermentation process itself.
